Preparation

Traditionally, preparing this sauce is generally a three-step process.  It involves preparing the dried chillies, the peanuts and then the sambal paste.  Put these together and the final result, your satay peanut sauce, voila!

    Step 1: Prepare the dried chillies by first cutting these up to remove excessive seeds. Then boil these for about 10 mins and remove from dirty water and set aside.

    Step 2: Roast the peanuts.  Once cooled, blend it to your liking. Some prefer to still have crunchy peanuts in the sauce while others like it smooth.  Preparing the peanuts can be done days in advance but do ensure proper storage until ready to use.

    Step 3:

    a. In a wok or deep pan, heat the oil and sautee all the ingredients starting with the onions, garlic, ginger and lemongrass.  Add the rest in while ensuring the heat is not too high.  Add a little water at a time as you go along to ensure ingredients are not burnt. Otherwise, your final sauce will be bitter! Also then put in the drained prepared chillies. In total, this step would be about 10 mins.

    b. Turn off fire and transfer ingredients to blender, pour in tamarind water and blend till smooth before returning this to the wok. Now add the blended peanuts and turn fire to medium small and stir to incorporate. At this point you may decide on the consistency of the sauce you want and do so by either adding more water or by lengthening the simmer to evaporate liquids more for thicker sauce.

  • Mix all ingredients in pot simmer with continuous stir. Check taste to personal preference with sugar & salt.
