Lye Water

Known also as Alkaline water or Kansui, Lye water is a versatile ingredient that can greatly enhance the texture and flavor of various dishes. It is used to create delicious traditional foods like chewy noodles, golden pretzels, and more. Other uses include soaking vegetables  like gherkins, cucumbers prior to pickling so they remain turgid and not become limp. Used also to make yellow, chinese noodles.
