Chinkiang or Zhenjiang vinegar is a black vinegar made from fermenting glutinous rice. Its well balanced tart, sour flavour is rich, pungent and slightly sweet. If a recipe calls for the use of Chinese vinegar without specifying a type, it would be safe to go with Chinkiang vinegar.
